To create the best flavoured beers we employed the services of some of Australia's most renowned talent in the food and brewing industries. Matthew Evans is a former hatted chef & author. He has written numerous books including ‘Good Food Guides’ and recipe books, he writes newspaper columns, is a regular contributor to magazines such as Gourmet Traveller and is an all around accomplished gastronomer. Matthew initially identifies the complementary flavours to match our chosen cuisines. Brian Watson is Fusion Brewing's Brewmaster who then turns Matthew's flavour-matching observations into unique recipes. Brian obtained his qualification from the prestigious Institute of Brewing in the UK and has been involved in establishing breweries and brewing throughout Europe, Asia and the Americas. Brian regularly judges both domestic and international beer awards and has himself won numerous gold medals. We then produce between 3 and 4 subtly different beer variations as trials then conduct extensive consumer testing - surveying more than 200 people nationally as to which beer flavour they prefer. Of course all the tastings were done whilst dining on either seafood or spicy foods. Finally, after approximately six months of testing and finessing the flavours we then embark upon commercial production and commence national distribution.
