First we decide upon the type of food to match.
Matthew Evans (renowned chef, foodie and author) then dissects the key ingredients of the food, samples a variety of beverages and identifies what qualities in a beer that would bring the best flavour out of the food. Matthew is currently on SBS with his show The Gourmet Farmer - it's fantastic with lots of recipes and a good laugh.
Brian Watson then turns this framework into a spectrum of beer recipes.
We trial these beers on hundreds of consumers (as they're eating the food we're matching) and seek their feedback. After more flavour tweaks, and around 6 months of development, the beer goes into full production.
